Mango Basil Grilled Cheese Sandwich – a sandwich with the unusual flavour combination of sweet ripe mangoes, fresh Italian basil, Mother Dairy cheese and a hot sauce to give it that kick!

Mumbai people have had a long love affair with the street side grilled sandwiches. Be it veggie and cheese, or just veggie toast, or plain potato sandwiches, these sandwich vendors at the street corners have perfected the art of sandwich making over the years. If you worked in and around VT (CST now) one could have a perfectly filling lunch time sandwich for a not so princely sum of 10 rupees (in those times).

I love to recreate the perfect Mumbai grilled sandwich in my kitchen. Sometimes I make it in the electric sandwich toaster, sometimes in the stovetop handheld toaster (this is my new love) and at other times the stove top grill pan for the perfect grill marks and that crisp exterior.

One of the reasons why sandwiches are so much fun is you can experiment endlessly with the fillings and flavours. They also make the best vehicles for any leftover vegetable curries. I can have sandwiches for any meal of the day and I’m sure most people will agree with me.

So what’s unusual about this grilled cheese sandwich?

My recipe for mango basil grilled cheese sandwich is surely an usual idea for a vegetarian sandwich. Fruit, herbs, cheese, hot sauce – sounds like a crazy combination, right? But one bite, and you’ll realise that this melange of flavours is a delight to the tastebuds. The sweetness of the mango, the aroma of basil, the salty tanginess from the cheese and the heat from the hot sauce, all come together to achieve a perfect flavour balance in this sandwich.

This is the first recipe as a part of the collaboration which I did on the Mother Dairy Instagram account. *If your tolerance for heat (spiciness) is good, then use this Bhut Jolokia sauce otherwise, any of the Tabasco variants work well.

*Stove top grill pan  useful not just for grilled sandwiches but also burgers, to grill vegetables like eggplant, zucchini etc.

Mango Basil Grilled Cheese Sandwich

Recipe for a grilled cheese sandwich with the unusual flavours of mango, basil and hot sauce, something to try when mangoes are in season

Ingredients
  

  • 4 slices whole wheat bread
  • 1 ripe mango
  • 2-4 slices of Mother Dairy cheese
  • few drops hot sauce
  • 1/2 cup leaves of Italian basil
  • 2 tbsp butter

Instructions
 

  • Preheat a stove top grill pan.
  • Peel and slice the mango into thin slices.
  • Lightly butter all slices of bread.
  • Top one slice of bread with a slice of cheese.
  • Layer basil leaves over the cheese.
  • Top with thin mango slices to cover the surface, and drizzle few drops of hot sauce. and cover with another slice of Mother Dairy cheese if you like your grilled cheese to be extra cheesy.
  • Lightly smear butter on the grill pan and place the sandwich, grilling both sides for 4-5 minutes until golden brown.
  • Slice in the middle into two triangles and serve hot.

    Excellent exotique sandwich. Was skeptic about it and made just one but eventually landed emptying the full packet of bread. I used Tabasco sauce and some Italian mixed spice. Thanks for sharing such a wonderful recipe
