I’d forgotten how hot and humid Mumbai summers could be. The humidity sticksĀ to your skin like a clingy love, the second you leave the confines of an air conditioned room. I’m feeling so low on energy that I’ve no drive to go out and meet friends or hang out at familiar spots in my home city ????
I’m obsessively making sure that there’s always enough ice in the freezer. Not meaning to sound snobbish or overly fussy, but six years in Bangalore have left me completely defenceless in the face of this heat!

I was just telling a friend how happily we spent our summer holidays here, I don’t even remember feeling the least bit uncomfortable. May be we weren’t used to rampant air conditioning then or the weather was just not as bad as it is these days.Ā 

Most mornings, I end up having a mug of iced coffee to start the day, weird as it may sound. It does the job of giving me a coffee fix without having me break into a sweat.

If you have grown up in India, then you’ll be familiar with the beaten coffee or the old fashioned home style cappuccino even before it was fashionable to drink cappuccinos in the coffee shops. Nowadays we have battery operatedĀ milk frothers or those that come as accessories with the fancy coffee makers, but there is a special joy in doing it the old fashioned way.

To prepare a cup of frothy iced coffee, add instant coffee granules and your sweetener / sugar of choice to a mug. Add a few spoons of hot milk or water to the mug and whisk the hell out of this using a fork, until the mix is quite frothy. Just add chilled milk to this and top with a cube of ice. Another favourite coffee for summer: Vietnamese Iced Coffee

The other method to prepare a frothy cold coffee is to use one of those shakers you get along with whey protein. This is a kind of a plastic bottle with a lid and a steel spring ball that goes into the bottle. Add coffee granules, sweetener, ice and milk and shake-shake-shake to get a super frothy iced coffee in no time.

This is how my Mumbai mornings start these days. For someone whose morning cup ofĀ ginger chaiĀ is sacrosanct, this is a total change of scene, but what to do, survival is at stake here ????

Ingredients Method Notes

Ingredients
  

  • 4 tsp instant coffee granules (I used Nescafe Gold Blend)
  • 2 sachets splenda (or use 4 tsp sugar, divided)
  • 4 tbsp hot water
  • 2 cups skimmed milk
  • 2-3 ice cubes

Method
 

  1. To prepare the frothy iced coffee, take 2 cups. Place 2 tsp instant coffee granules, 1 sachet Splenda (or 2 tsp sugar) and 2 tbsp hot water in each cup.
  2. Using a fork whisk the mixture in each cup for around 2 minutes until it is very frothy.
  3. Stream in the chilled milk in each cup. Stir gently and top with ice cube. Serve immediately.

Notes

This recipe makes 2 mugs of iced coffee. 2 tsp of coffee per cup works well for the coffee granules blend that I use. This depends on how strong your coffee is and how strong you like your cup to be, so adjust the quantity accordingly.
