Coming up next- is something I made for Meeta’s _Monthly Mingle _. Well, there’s nothing much happening in India on the football front with the exception of Kolkata -where the 3 chief interests are Phood, Phish and Phootball (meaning food, fish and football) Kindly note that Phood and Phish are listed separately.

I haven’t decided which team to cheer. So, it’s easier to just take sides with the team that wins in the end and I shall be celebrating, with the Orange Rum Cake.

This is Tarla Dalal’s recipe and i have tinkered with it a little!

  3. Cream the butter and sugar / sugar substitute together in a bowl (mix them together until soft).
  4. Add the orange juice, buttermik, rind, rum and what flour mixture. Mix well.
  5. Pour batter into greased tin.

  7. Cut into 6 wedges.
  8. Serve as a dessert with a shot of rum.

Notes

Note:
*recipe says low fat butter- but I haven't come across low fat butter in our grocery stores.
You can skip the rum if you wish and add 3 tbsp of milk instead.

Changed your template? Looks good!Cool..I have never made rum cake before or for that matter anything that calls for alcohol. I know people say the alcohol cooks down and just leaves the flavor but I am not sure if I would like the flavor. As you noted, I’ll try this cake with just the milk. But then it wouldn’t be called, rum cake, would it now :-p.

well, you can always call it orange milk cake, but trust me the flavour was amazing- i even fed it to my grandparents without any guilt as alcohol evaporates over 100C and this is baked at 200 C ;)In case you try it with milk, please let me know how it turns out !

Nandita,Now who’s KC? What has he/she got to do with your blog? I am curious.Hey, I too have this book with me in India. (Actually I have about 25 recipe books, 2 fat files full of recipes and many ‘cookery special’ issues of magazines sitting in my Pune home.) I got only two books with me to Germany and some recipes which were on the hard disk of our private laptop. I miss my recipe collection. :(Your new template as well as the recipe look good. I mean I knew this recipe, but never tried it out. Now that you have made it, I have enough courage to go ahead and do it myself.

KC is my brother in law- he was feeling bad for all the non-vegetarians around the world- coz they have no meat to read about in my blog. He is going to write about some of the stuff he’s been grilling all of summer in Dallas. I recently add him as a team member, so that he gets posting rights on my blog. Thanks for liking my new template, the last one was giving me too many problems- as in i did too much tinkering and the template just refused to take any more! Hence, the change- all for the best i guess LOLDo try this one, it came out superb, but please don’t try her low fat cheesecake, ended up tasting like a new variety of raita LOLLLSo how did you like my idea for the mingle? Didn’t say anything on that??

Nandita,This is almost like chatting. I get a reply within minutes! But what are you doing there at the computer at this hour? It must be around 2 a.m. in India. As MM, I like your idea of celebrating for the winning team. That’s somewhat like the independent candidates in Indian elections. If they win, they immediately attach themselves to the party with the majority of votes. (I am just kidding. I don’t mean that you are as bad as the politicians and all that…or maybe just a little? ๐Ÿ˜‰
