I haven’t decided which team to cheer. So, it’s easier to just take sides with the team that wins in the end and I shall be celebrating, with the Orange Rum Cake.
This is Tarla Dalal’s recipe and i have tinkered with it a little!
Orange Rum Cake for the Monthly Mingle

Ingredients
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 cup butter *
- 1/2 cup sugar splenda or (recipe uses 8 sacets of substitute)
- 1/4 cup orange juice freshly squeezed
- 1/2 cup buttermilk (made from 2 1/2 tsp low fat curd )
- 1 tsp orange rind
- 3 tbsps rum
Instructions
- Pre heat the oven at 400 F/ 200C. Grease a 5" baking tin and keep aside.
- Sieve the wheat flour and baking powder together and keep aside.
- Cream the butter and sugar / sugar substitute together in a bowl (mix them together until soft).
- Add the orange juice, buttermik, rind, rum and what flour mixture. Mix well.
- Pour batter into greased tin.
- Bake for 20-25 min at 400 F / 250 C until a tester comes out clean.
- Cut into 6 wedges.
- Serve as a dessert with a shot of rum.

Note:
*recipe says low fat butter- but I haven't come across low fat butter in our grocery stores.
You can skip the rum if you wish and add 3 tbsp of milk instead.

Changed your template? Looks good!Cool..I have never made rum cake before or for that matter anything that calls for alcohol. I know people say the alcohol cooks down and just leaves the flavor but I am not sure if I would like the flavor. As you noted, I’ll try this cake with just the milk. But then it wouldn’t be called, rum cake, would it now :-p.
well, you can always call it orange milk cake, but trust me the flavour was amazing- i even fed it to my grandparents without any guilt as alcohol evaporates over 100C and this is baked at 200 C ;)In case you try it with milk, please let me know how it turns out !

(Actually I have about 25 recipe books, 2 fat files full of recipes and many ‘cookery special’ issues of magazines sitting in my Pune home.) I got only two books with me to Germany and some recipes which were on the hard disk of our private laptop. I miss my recipe collection. :(Your new template as well as the recipe look good. I mean I knew this recipe, but never tried it out. Now that you have made it, I have enough courage to go ahead and do it myself.
KC is my brother in law- he was feeling bad for all the non-vegetarians around the world- coz they have no meat to read about in my blog. It must be around 2 a.m. in India.As MM, I like your idea of celebrating for the winning team. That’s somewhat like the independent candidates in Indian elections. If they win, they immediately attach themselves to the party with the majority of votes. (I am just kidding. I don’t mean that you are as bad as the politicians and all that…or maybe just a little? 😉

Vaishali, this is sure like chatting- it was around 2 am in India, i was just stuck in some bad traffic, yeah even at that hour, when i was coming back from dinner with friends- and when India is not playing, any team is a good team to support and esp the winning team LOLAshwini- if you love dessert with liquor, you are right in my alley girl!
