Long time, no bake! It was vacation time and were mostly not at home and the weather was not too beckoning to bake either. But now, back in Bangalore, the evening rains and drop in temperature is reason enough to get the oven cranked up. I also spent a better part of Friday morning cleaning up the refrigerator and I came across half a pack of prunes that I was saving up for god knows when.
The folks at Assam1860 Tea sent me a sampler of their beautiful tea. It’s straight from their plantation, minimally processed and just like how I like my tea, strong and rich.
Prunes soaking in hot Assam tea
I decided to marry the flavours of the strong and intense Assam tea with the prunes and the result was a soft, homely cake that is perfect with your cup of tea. Or coffee. Or even in your kid’s snack box.
My son was quick to comment when he saw the cake come out of the oven, “if this looks and smells so good, I cannot imagine how good it would taste”. It was quite hilarious to see him ply my cake and me with compliments, just so he could get his hands on a couple of slices asap.
If you do not have prunes on hand, give it a try with dates or raisins, which will provide a similar natural sweetness and moisture to the cake. Presenting to you this utterly moist and delicious vegan prune cake recipe.
