Long time, no bake! It was vacation time and were mostly not at home and the weather was not too beckoning to bake either. Ingredients

  • 16 prunes ( I used Sunsweet brand)
  • 2 tea bags Assam (I used Assam1860)
  • 1 cup water boiling hot
  • 3/4 cup sugar granulated
  • 1/2 cups sugar or (plus grated jaggery 1/4 cup)
  • 1/4 cup vegetable oil
  • 2 tbsps orange marmalade
  • 1 cup whole wheat flour
  • 1/2 cup all purpose flour (maida)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon powder
  • 1 tsp white vinegar apple cider vinegar regular or
  • 1 tsp vanilla extract
  • 1 apple red , halved , pared and sliced
  • 2 tsps 1/4 tsps sugar cinnamon plus powder

Instructions

  • Prepare a 9" square baking tin with parchment paper or greased aluminum foil. Keep aside.
  • Preheat oven at 180xb0C.
  • Soak the prunes along with tea bags in boiling hot water. Keep covered for 2 hours or so. In this time the prunes with soak up most of the tea liquor and become soft. Squeeze out the tea bags and discard.
  • In a blender, using the soaking liquid, blend the softened prunes, sugar, jaggery, oil and marmalade until you get a puree.
  • In a bowl, whisk the dry ingredients. Make a well and add the prepared puree, vinegar and vanilla.
  • Gently mix together until all the flour is absorbed. Do not over mix. If the mix is dry, then add upto 2-3 tbsp of warm water, 1 tbsp at a time until you get a cake batter consistency.
  • Scrape out the batter into the prepared baking tin. Gently place slices of apple on the top, sprinkle a mix of cinnamon and sugar over this.
  • Bake for 35-40 minutes until a knife or tester comes out clean. Allow to cool in pan for 5-10 minutes. Remove from pan, peel out parchment.
  • Slice into squares and serve warm.

Notes

Note: The apple slices are optional but in the absence of any sugary icing, it does make the cake look a lot prettier.
