Sundays are for setting aside 30-45 minutes to prepare a plan of all that I’ll be cooking in the coming week. It makes life so much easier when it comes to shopping, prepping and saves a lot of stress and time waste.
After my column in Huffington Post on 5 Benefits of Weekly Menu Planning, a lot of readers wrote in asking me to share my weekly plans. This is a vegetarian menu (has eggs) for a week, including kiddie lunchbox ideas. Do note that this is just indicative and you can take ideas from my menu. I follow the 5-2 way of life, so Mondays and Thursdays are very light and you can replace the soups and salads with regular meals 🙂
