Mango Cucumber Salad

Ingredients
  

  • 2 medium sized ripe mangoes
  • 2 medium cucumbers
  • 200 grams firm tofu

dressing

  • 2 tbsp dark soy sauce
  • 1 tbsp honey or maple syrup
  • 1 tbsp white vinegar or rice vinegar
  • freshly ground black pepper to taste
  • 2-3 tsp pinches ground ginger or use 1/2finely grated fresh ginger

garnish

  • micro greens optional
  • toasted mixed seeds

Instructions
 

  • Peel and dice the mango and cucumber.
  • Blot the tofu with a clean cotton towel and dice it ~1 cm cubes.
  • In a bowl, mix together all the ingredients for the dressing until well combined.
  • Add the prepared mango, cucumber and tofu in the dressing and toss gently until well coated.
  • Serve into two bowls and top with mixed seeds and either micro greens or any herbs of your choice, finely chopped.
