Healthy Date pancakes
These date pancakes are an attempt to pack more nutrition into a sugary breakfast! With the fibre from dates and millet/oat flour these pancakes are healthy but delicious!

- 1 cup whole wheat flour
- 3 tbsps jaggery grated
- 1.5 cups buttermilk thinned yogurt can be used
- 1/4 tsp baking soda
- 2 tbsps coconut grated -fresh / dehydrated
- pinch cinnamon powder
- 2 tbsps date puree*
- 2 tbsps raisins optional
- pinch salt
- butter or oil for cooking
To prepare date pancakes, mix all the dry ingredients in a medium bowl.
Whisk the date puree into the buttermilk.
Slowly add the date-buttermilk with constant stirring to avoid lumps. The consistency of the batter should be such that it sticks to the back of the ladle after mixing. Mix in chocochips if using.
Grease a non stick pan with few drops of vegetable oil / butter.
Once pan is hot, add a couple of tablespoons of batter and spread into pancake.
Cook on both sides till golden brown using a little oil/ butter.
*To prepare date puree, soak dates for 3-4 hours in warm water. Remove the seeds if any and grind to a fine puree in the small mixer jar.
This makes about 6-7 depending on the size of the pancakes.
