Celery Rice with Orange Zest
Celery Rice is a delicious recipe made using the stem and leaves of celery, flavoured with orange zest. Goes well with a continental baked dish or grilled veggies. Mild enough for kids too!

- 1 cup rice long grained (basmati)
- 2 tsps olive oil ghee or
- 3 cloves garlic finely chopped
- 1 green chilli , finely chopped
- 200 grams celery stalks with leaves
- 2 cups water
- 1 vegetable stock cube (Maggi,optional)
- 1 orange zest of
- to taste Salt
Wash and finely slice celery stalks. Finely chop celery leaves. Keep them aside in separate bowls.
Wash and soak rice in water for 30mins.
In a large pan, heat oil. Sautxe9 garlic, green chilli and celery stalks for 5mins.
Then add celery leaves and saute on low flame for 5-7mins.
Add orange zest, stock cube, water and 1/2 tsp salt. Bring to a simmer.
Add soaked rice and cook covered for 8 mins or so until done.
Serve with a curry or with baked vegetables.
Tip: How to grow celery from store bought celery
If you are lucky to find celery bunch with roots intact, chop off the stems leaving an inch of stem above the root, place in a jar of water for a week or so until new roots appear and then stick it into a pot with good soil. You will have your own supply of celery for soups and salads.
