Pazham Dosai / Sesame Banana Pancakes - In Support For #SeedTheRiseChallenge

Recipe for Banana Sesame Pancakes / Pazham Dosai  - a healthy dosai / pancake, that needs no grinding or fermentation.

Ingredients
  

  • 2 bananas large
  • 2 tbsps sesame seeds white
  • 1/2 cup jaggery powdered
  • 1/2 cup rice flour
  • 1/2 cup whole wheat flour
  • 1/2 cup milk
  • 3 - 4 cardamom green
  • 2 tbsps ghee

Instructions
 

  • On a skillet, lightly toast the sesame seeds. Allow to cool.
  • In a mixer jar, grind the sesame seeds, crushed jaggery and seeds from cardamom pods into a coarse powder
  • In a large bowl, add the peeled bananas and mash coarsely with a fork. Add the flours, the jaggery-sesame-cardamom mix and mix well with the fork.
  • Add the milk and whisk with a fork until you get a thick batter. You will find small bits of banana in the batter, which you can leave as it is.
  • Add 1 tbsp melted ghee and stir to mix well.
  • Keep covered and let it sit for 15-20 minutes.
  • Heat a non stick pan, grease with ghee.
  • Pour 1 tablespoon of batter per dosa/pancake, do not spread /thin out. You can make 4-5 dosas / pancakes at a time depending on the size of the skillet/tava.
  • Allow to cook on one side for 45 seconds-1 minute and then flip over. Drizzle ghee along the sides and allow this side to cook and turn golden brown as well.

Notes

A bite of these pancakes brings forth a burst of aromas and flavours from ripe bananas and cardamom. Rice flour adds a bit of crispness to the dosas and the small chunks of bananas in the batter get all the more delicious after cooking the dosas.
Vegan Banana Dosai / Pancakes - To make it vegan, add water or soy milk to prepare batter and use coconut oil instead of ghee.
