Pazham Dosai / Sesame Banana Pancakes – In Support For #SeedTheRiseChallenge
Recipe for Banana Sesame Pancakes / Pazham Dosai  – a healthy dosai / pancake, that needs no grinding or fermentation.

  1. On a skillet, lightly toast the sesame seeds. Allow to cool.
  2. In a mixer jar, grind the sesame seeds, crushed jaggery and seeds from cardamom pods into a coarse powder
  3. In a large bowl, add the peeled bananas and mash coarsely with a fork. Add the flours, the jaggery-sesame-cardamom mix and mix well with the fork.
  4. Add the milk and whisk with a fork until you get a thick batter. You will find small bits of banana in the batter, which you can leave as it is.
  5. Add 1 tbsp melted ghee and stir to mix well.
  6. Keep covered and let it sit for 15-20 minutes.
  7. Heat a non stick pan, grease with ghee.
  8. Pour 1 tablespoon of batter per dosa/pancake, do not spread /thin out. You can make 4-5 dosas / pancakes at a time depending on the size of the skillet/tava.
  9. Allow to cook on one side for 45 seconds-1 minute and then flip over. Drizzle ghee along the sides and allow this side to cook and turn golden brown as well.
Recipe Notes

A bite of these pancakes brings forth a burst of aromas and flavours from ripe bananas and cardamom. Rice flour adds a bit of crispness to the dosas and the small chunks of bananas in the batter get all the more delicious after cooking the dosas.

Vegan Banana Dosai / Pancakes – To make it vegan, add water or soy milk to prepare batter and use coconut oil instead of ghee.
